This savory Listan Prieto-dominant wine is loaded with textured flavors of dark fruits, red currants, cracked black pepper, and crushed flower petals. Serve slightly chilled with grilled mushrooms, aubergine dips, or Spanish-inspired tapas at home.
Envínate (translates as "wine yourself") is the brainchild of 4 friends, winemakers Roberto Santana, Alfonso Torrente, Laura Ramos, and José Martínez. They formed in 2005 while studying enology in Alicante. Upon graduation, they formed a winemaking consultancy, which evolved into Envínate, a project that focuses on producing pure and expressive wines.
In Tenerife, the Listán Prieto stands on plots between 900 and 1,000 meters above sea level on the slopes of the Teide volcano, the highest mountain in the Canary Islands. It is old, uncut bush vines that provide this unique material for the red variant of "Benje". Each parcel is selected by hand and vinified separately, some in concrete, others in small open vats. Maceration takes 10 to 30 days, depending on the plot. The malolactic fermentation takes place in neutral French barriques, after which the wine matures for eight months in the same barrels without bâtonnage or sulfur addition.
