The holy wine from slate!
This wine is just UNBELIEVABLEEE! 90% Mencia grown on the steep slate slopes of the Ribera Sacra in Galicia, is a journey for your senses. Rose and sour cherries, pomegranate and herbs, rosemary and pepper, a little tobacco and a touch of ink and grated slate. If Burgundy were on the Atlantic, it could go in the same direction.
Envínate (translates as "wine yourself") is the brainchild of 4 friends, winemakers Roberto Santana, Alfonso Torrente, Laura Ramos, and José Martínez. They formed in 2005 while studying enology in Alicante. Upon graduation, they formed a winemaking consultancy, which evolved into Envínate, a project that focuses on producing pure and expressive wines.
This cuvée consists of 90 to 95% Mencía, the great red grape variety of Galicia. But as was customary in the past, it was planted in a mixed set with a small proportion of other grape varieties. These include, for example, the autochthonous regional varieties Merenzao, Brancellao, Caiño, Sousón and Mouratón, Alicante Bouschet and the white Godello and Palomino. The vines grow on steep slopes made of slate, gneiss, granite and mica slate at an altitude of 400 to 600 meters. The grapes are hand-picked and mashed with the feet in open vats, then fermented spontaneously with wild yeast. To the fermenting juice is also added a 40% of whole clusters for a rounder tannin grip.
