You know, in Jura, Savagnin is traditionally made in oxidative style, but this on the other end is "topped up", meaning that it retains its crisp and fresh nature. It is packed with citrus fruit, tension, minerality and a touch of bitterness. once again very representative and well made! Chapeau!
In his early thirties, this young winegrower took over the family business 2 years ago. He converted to "organic" farming with tillage or permanent grassing. Here he grows the 5 traditional Jura grape varieties plus a sixth, much more discreetly called "Melon à queue rouge". Kevin's wines do not contain any chemical inputs. He thus produces "natural" wines.
This wine is topped up during winemaking, meaning that is made in a reductive style. Aged in barrique is bottled unfiltered. Long potential for the most patients of you.
